How-To

Ingredients:

  • 3 tbsp butter, divided
  • 1 cup panko or crushed crackers
  • 1 1/2 cup cheddar cheese, grated
  • Non-stick cooking spray
  • 8 oz. elbow macaroni
  • 2 tbsp flour
  • 1/2 cup milk
  • Salt
  • Pepper
  • Green onions
  • Paprika

Supplies:

  • Mini muffin pan
  • Mini silver appetizer plates

1) Make the crust

Melt a tablespoon of the butter. In a bowl, mix the melted butter, crushed crackers or panko, and 1/2 cup of cheese together. Spray the mini muffin pan with non-stick cooking spray, then firmly press the cracker mixture into the bottoms of the muffin pan wells.

2) Mix the mac-and-cheese

Preheat the oven to 400°F. Cook and drain the pasta. In a large pot over medium heat, melt the remaining butter and whisk in the flour. Add the milk and whisk out any lumps. Then add the pasta, salt and pepper to taste, and 3/4 cup of cheese. Stir together until evenly coated.

3) Spoon & bake

Spoon the macaroni mixture into each cracker crust of the muffin pan and sprinkle the tops with the remaining 1/4 cup of cheese. Bake until the cheese is slightly browned and crispy, 15-20 minutes.

4) Serve up mini mouthfuls

These cheesy morsels will be gobbled up fast when they're displayed on mini silver appetizer plates with a garnish of green onions and paprika. Perfect for your Friendsgiving mini tasting party or as a Thanksgiving appetizer.
