Friendsgiving Acorn Squash Recipe
Whip up Harvest Half Moons
Roasted acorn squash + bacon + mushrooms + pumpkin seeds = yum! Cut 2 medium squash in half, remove seeds and cut into 1/2 inch thick slices. Arrange on a pan and season with a sprinkling of olive oil, salt and pepper. Pop in the oven at 400°F until tender and brown. While they're roasting, sauté bacon, onions, sliced mushrooms and a handful of pepitas (green pumpkin seeds) in a pan. Serve your succulent squash and bacon mix on a clear plate and fall-themed charger – this squash dish will be the pick of the patch!
