Ingredients:

  • Muffin pan
  • Cupcake decorating set

For the batter:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons tequila
  • Juice and zest of 1 lime
  • 1/2 cup buttermilk

For the frosting:

  • 1 cup unsalted butter, at room temperature
  • 3 cups confectioners sugar
  • 1 tablespoon lime juice
  • 2 tablespoons tequila
  • 1/8 tsp salt

Instructions:

  1. Line a muffin pan with baking cups. Preheat oven to 325 degrees.

  2. Beat butter and sugar together until light and fluffy, approximately 5 minutes.

  3. Add eggs one at a time, mixing until thoroughly combined each time.

  4. Add the vanilla extract, tequila, lime juice and zest. Mix until combined.

  5. In a separate bowl, whisk together flour, baking powder and salt.

  6. Take turns adding the buttermilk and dry ingredients to the butter-sugar mixture, mixing until just combined.

  7. Pour into muffin pan and bake for 25 minutes or until golden.

  8. When cupcakes have cooled for 10 minutes, brush the tops with tequila.

  9. After cupcakes have cooled completely, decorate with frosting, candy fruit slices and sprinkles of crushed-up rock candy.

Makes approximately 12 cupcakes
